Directions

Step 1: Place the cocao powder in a medium bowl. Add coconut milk and use a whisk to stir until smooth, adding coconut milk a little at a time to minimize clumping.
Step 2: Stir in maple syrup, salt, and vanilla extract.
Step 3: Add in the remaining coconut milk and the chia seeds. Whisk until everything is combined.
Step 4: Set aside for to thicken slightly.
Step 4: In a saucepan combine the raspberries and maple syrup. Cook over medium heat, stirring regularly until the raspberries have mostly disintegrated and mixture thickens slightly. Compote does not need to be smooth.
Step 5: Once chia mixture has started to thicken, give the mixture another whisk and distribute into serving dishes leaving some space at the top of the container.
Step 6: Pour a layer of raspberry compote on top of the chia. For more defined layers, store the compote separately and only layer right when serving. Compote will seep into chia layer as it sits.
Step 7: Cover and place in the fridge for at least 4 hours or overnight.
Step 8: Serve more berries, shaved chocolate, or cacao nibs.

- Once the mixture has started to thicken, give it another whisk and distribute into serving jars or bowls. Leave a little space on top of the container.
