Curry Chicken Salad with Grapes

The most delicious curry chicken salad that you’ll ever have. Seriously, this recipe is so good.

Instructions

  1. Put chicken in pan covered with liquid
  2. Add bay leaves, peppercorns, salt, thyme garlic
  3. Cook chicken for about 40-45 min until cooked through and no longer pink
  4. Cut chicken into bite-sized pieces
  5. Let cool in refrigerator for about 15 minutes
  6. In separate bowl, add mayo, curry, celery, and black pepper
  7. Stir to combine with cooled chicken
  8. Add grapes and glazed pecans last, then combine
  9. Let mixture set in refrigerator for at least 2 hours to allow flavors to peak and “marry”

Notes

Serve on top of greens as a salad or with your favorite gluten free bread in a sandwich as desired.
