Dressing Ingredients:
- 1/2 cup blackberries
- 2 tsp Dijon mustard
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 2 tbsp honey
- 1 tsp coconut aminos
- 1/4 tsp salt
- 1/4 tsp black pepper
Salad:
- 11oz spring mix greens (large tub)
- 1 cup fresh blackberries
- 1 avocado, sliced
- 1/4 cup red onion, sliced
- 1/4 cup walnuts, chopped
Chicken
- 1 lb chicken breasts
- 1 tsp salt
- 1 tsp poultry seasoning
- 1/2 tsp black pepper
- 1/2 tsp paprika
Instructions
- Season chicken with salt, pepper and poultry seasoning. Ideally you would let this sit for 30 minutes before moving on to step 2.
- Preheat a grill pan with avocado oil and sauté chicken over medium-high heat.
- Mash the berries with a fork or puree them using a food processor.
- Add other salad dressing ingredients and combine.
- In a large bowl add spring mix salad greens and arrange with blackberries, walnuts, onions and chicken on top.
- Drizzle with blackberry balsamic dressing as desired.
