Baked Salmon Balls with Orange-Pineapple Glaze

These salmon balls make the perfect bite-sized snacks.






  1. Preheat oven to 350 degrees
  2. Drain salmon and flake well.
  3. Add lemon juice, pepper, mayonnaise, old bay seasoning, fish sauce and half of ground crackers to salmon
  4. Mix well
  5. Using a tablespoon, scoop salmon mixture out into palm and roll gently into balls
  6. Then roll salmon balls into remaining cracker crumbs
  7. Place on lightly oiled (using olive oil) cookie sheet
  8. Lightly spray tops of salmon with coconut oil spray
  9. Cook for 25 minutes turning half way through
  10. Remove from oven


  1. Place all ingredients into small pot on medium heat
  2. Stir gently and simmer for 15-20 minutes or until liquid begins to thicken slightly and reduces by half
  3. Strain the liquid.
  4. Drizzle over salmon balls or serve alongside remaining sauce for dipping
