Baked Potatoes with Bacon, Egg & Cheese

  • 4 Russet potatoes
  • 2 tbsp canola pil
  • 4 strips (cooked/chopped) bacon
  • 3 boiled eggs (diced)
  • chives
  • kale chips
  • cheddar cheese
  • Greek yogurt
  • kosher salt
  • pepper


  1. Preheat oven to 400 degrees
  2. Wash and dry potatoes
  3. Pierce multiple times with fork
  4. Rub potatoes with canola oil
  5. Sprinkle with kosher salt
  6. Bake for 1 hour or until fork tender
  7. Slit the top of the potato with a knife
  8. Lightly sprinkle the inside of the potato with salt and pepper
  9. Fill each potato with equal portions of bacon, eggs, chives, kale, cheese and top with a spoonful of Greek yogurt
