About This Einkorn Yogurt Bagel Recipe

These TikTok inspired bagels are made with einkorn all purpose flour. It took quite a bit of trial and error to get them just right. They come out perfectly with a chewy texture on the inside, golden, slightly crisp and shiny finish on the outside. Einkorn bagels are better than modern wheat bagels because they are easier to digest, have a weaker structure gluten and are more nutritious. Plus, you know exactly what’s in them.
Good luck finding einkorn bagels or other einkorn flour baked goods in the store though. The original wheat is now pushed to the side in favor of modernized quick breads filled with additives. These additives are even added to many “natural” flours and organic breads!
This goes beyond shopping “organic”. That’s why my goal is to bring you tasty, tried and tested healthy recipes that you can make yourself. For best results, I recommend using the same (or as close to the same) ingredients and brands as possible (when mentioned).
These einkorn yogurt bagels are appropriately named, due to the use of einkorn flour and yogurt in this recipe. This simple recipe only contains five ingredients. Don’t worry, there is no boiling step. Plus, it will take you less time to make these than to go to the store and buy a bag of bagels.

Tools Needed
- parchment paper – prevents the bagel from sticking to the pan
- pastry scraper – the bagel dough can get quite sticky, using a dough scraper helps a bit
- pastry brush – for brushing bagels with egg wash
- sheet pan – provides an even surface to cook the bagels
- medium bowl
Ingredients

einkorn flour – my preferred einkorn flour at the moment, this one also works
egg (for egg wash) – one whole egg mixed with a splash of water
Greek raw or organic Greek yogurt (full fat) – Greek yogurt is less runny than regular yogurt. The choice of yogurt will greatly affect the consistency of your final product. I highly recommend using Greek yogurt in this recipe. You can scoop the Greek yogurt off the top, leaving the whey that has settled to the bottom. Use saved yogurt whey to make things like lacto-fermented apple cider and fermented fruits and vegetables.
You can also use full fat raw cottage cheese (instead of yogurt) which works pretty well. If the mixture is a bit too dry add about 1-2 tbsp more yogurt.
baking powder – gives the bagels there rise.
Everything But the Bagel seasoning poppy seeds or sesame seeds (optional) – for dusting
Directions








Step 1: Preheat oven to 375°F (190° C).
Step 2: Line a baking sheet with parchment paper.
Step 3: In a medium bowl combine flour, baking powder, salt and Greek yogurt.
Step 4: Mix together with a spatula and mix slightly with your hands or a spoon. The dough can get rather sticky. (hint: I’ve found that letting the dough rest in the fridge for 30 minutes prior to shaping, helps it handle much more easily).
Step 5: Divide the dough into four equal balls. Lightly roll each into a rope and bring the rope around to make a bagel ring with your hands.
Step 6: Place the shaped bagels on the prepared baking tray.
Step 7: Beat the egg in a small bowl with a splash of water and brush on the top of the bagels for a shiny finish.
Step 8: Add the topping – sprinkle with Everything Bagel seasoning on top.
Step 9: Bake in the preheated oven for 25 minutes.
Step 10: Let cool on a wire rack for 10 minutes before enjoying.

Tips and Tricks on Making Einkorn Yogurt Bagels
- This dough can get pretty sticky. If the dough feels a bit too sticky to handle, put it in the fridge for 30 minutes to rest prior to shaping. You can also try adding 1 tablespoon of einkorn flour at a time to help with rolling. Don’t add too much flour as this will cause the dough to get tough. Using a dough scraper to handle the dough is also a big help.
- These bagels taste better fresh.
- If you have lots of kefir on hand you can try substituting kefir for Greek yogurt. Keep in mind that you may need slightly more flour when you use kefir. This will also lead to a tangier flavor.
- Whole Greek yogurt is preferred for this recipe, but you can use plain full fat yogurt in a pinch. Remove as much of the liquid whey from the yogurt before using. Increase the einkorn flour to about 1 3/4 cup if using plain, non-Greek yogurt.
- If the Greek yogurt separates in the fridge before use, use this to your advantage. Spoon the thicker yogurt from the top (for use in the recipe), and leave the liquid whey behind for another time.
Make It A Einkorn Protein Bagel
If you’re looking a high protein einkorn bagel, try swapping out the Greek yogurt for cottage cheese. Cottage cheese has just a little more protein when compared to Greek yogurt. Just one gram of cottage cheese contains 24 grams of protein a cup.
To make these einkorn protein bagel, swap one cup of cottage cheese instead of yogurt, cup per cup. You many need to add 1-3 more tbsp of cottage cheese, if it’s too dry.

Will the results be the same if you double the recipe for einkorn bagels?
Hi Dan. While I haven’t doubled the recipe (in real time – up to this point), I don’t think doubling will alter the final product. The biggest thing you should be mindful of is overmixing the dough, granted that things will get really sticky. The more dough you have, the more your technique will be important. Take a look at the video link below and see if that helps. Also, skipping the hole in the middle (making buns), works quite well too!
