1/2 cup chia seeds
1 1/2 cans coconut milk
1–2 tbsp maple syrup
1 tbsp vanilla extract
* Add various fruits or toppings as desired.
Pour chia seeds, coconut milk, vanilla and coconut milk in large bowl.
Mix well in a large mixing bowl.
Portion as desired and refrigerate for 2 hours or overnight.
Top with fruits like berries and bananas.
Making this chia seed pudding in glass containers or mason jars makes it easy for individual size servings on the go. I used short drink glasses for presentation.
