Scrambled Eggs with Smoked Salmon

The key to cooking these scrambled eggs is low and slow. A delicious breakfast for any day of the week.

Ingredients
  • 6 eggs
  • 2 oz smoked salmon
  • 1 tsp unsalted butter
  • 1 tbsp sour cream
  • slash cream
  • 2 tbsp shredded mozzarella cheese
  • 2 sprigs scallions (chopped)
  • fresh cracked pepper
Instructions
  1. Melt butter in pan on low-medium heat
  2. Add cream to eggs and beat well
  3. Saute scallions for a few seconds then add eggs to pan
  4. Gently stir eggs using spatula
  5. Add sour cream, cheese and fresh cracked pepper as desired
  6. Add salmon last
  7. Cook until desired doneness

You can eat these just as they are or paired with lightly toasted bagels or baguettes.
