Spiced Butternut Squash Bisque

I love enjoying butternut squash soup but got tired of the same old flavors.  Try my recipe for Spiced Butternut Squash Bisque.  Then Tweet it, Pin it, Post it, Enjoy It!

Serves: 2-4    Prep time: 5 min    Cook time: 25 minutes

The Plan

1 butternut squash (peeled and cut into 1 inch pieces)

1 3/4 cup chicken broth

½ cup apple juice

½ tsp cumin

½ ground allspice

1/8 tsp salt

1/8 tsp black pepper

1/8 tsp cayenne pepper

2 tbsp olive oil

The Execution

• Preheat oven at 450˚F

• Toss squash into olive oil

• Add salt and pepper

• Bake for 20 minutes or until tender

• Remove squash from oven

• Add to blender along with chicken stock and apple juice

• Transfer to sauté pan and return to temperature. Serve hot.
