Serves: 2-4 Prep time: 5 min Cook time: 25 minutes
1 butternut squash (peeled and cut into 1 inch pieces)
1 3/4 cup chicken broth
½ cup apple juice
½ tsp cumin
½ ground allspice
1/8 tsp salt
1/8 tsp black pepper
1/8 tsp cayenne pepper
2 tbsp olive oil
• Preheat oven at 450˚F
• Toss squash into olive oil
• Add salt and pepper
• Bake for 20 minutes or until tender
• Remove squash from oven
• Add to blender along with chicken stock and apple juice
• Transfer to sauté pan and return to temperature. Serve hot.
